Harvest Cobb Salad + Jammy Soy Marinated Eggs

Some salads are really just a collection of good things tossed into a bowl. A Cobb salad is different. It’s a little more deliberate — rows or clusters of chicken, bacon, eggs, avocado and blue cheese arranged over crisp greens, each ingredient holding its own until everything comes together in the forkful.
That’s what I love about a Cobb.
For early fall, I wanted to give the classic a seasonal turn without taking it so far that it stopped being a Cobb. So I swapped out the tomatoes for crisp apples and roasted sweet potatoes, added toasted pecans, and made a maple-cider-Dijon vinaigrette. The chicken gets a lemon-herb marinade, and the traditional hard-boiled eggs are replaced with my favorite little twist: jammy soy-marinated eggs.
The result is a Cobb that still feels familiar, but a little more at home in September.
The Seasonal Guest Stars
The supporting cast is what gives this Cobb its autumn personality. Roasted sweet potatoes bring caramelized edges and a little warmth, while crisp apples add the juicy crunch that keeps every bite fresh. Toasted pecans bring another layer of texture, and the cider-Dijon vinaigrette ties it all together with a tangy bite and just a whisper of maple.
And then there are the soy-marinated eggs. They’re the wildcard here — savory, deeply seasoned and perfectly jammy in the center. I love the way they play against the sweetness of the sweet potatoes and apples, the saltiness of the bacon and the tang of the blue cheese. They’re also the ingredient that makes this Cobb feel distinctly its own.

The chicken starts with a really good marinade
The chicken is marinated in a bright lemon-Dijon mixture with garlic and herbs before it’s grilled or roasted. It’s flavorful enough to stand up to the other big personalities in this salad, but not so assertive that it takes over.

Cobb Salad Components
- Soy Marinated Eggs
- Lemon Herb Marinated Chicken
- Romaine Heads or Mixed Greens
- Roasted Sweet Potatoes
- Bacon
- Dried Cranberries
- Toasted or Candied Pecans
- Crumbled Blue Cheese
- Avocado
- Apples (Honeycrisp or Pink Lady)
Cider Dijon Vinaigrette
- Cider Vinegar
- Dijon Mustard
- Olive Oil
- Maple Syrup
- Garlic (Minced)
- Salt
- Pepper
Step-by-Step Instructions


Prepare the Soy-Marinated Eggs. Marinate according to this recipe at least two hours ahead of time and up to overnight. Prepare the Chicken. If breasts are thick, slice horizontally into cutlets. Mix marinade (try this Lemon Herb Marinade!) and let it marinate for 2-6 hours before cooking.


Grill or roast chicken until the thickest part reaches 165°F. Let rest for 5-10 minutes before slicing. Roast the sweet potatoes: Preheat oven to 425°F. Toss sweet potatoes with olive oil, salt, pepper. Roast for 25–30 minutes, turning once, until tender and caramelized. Set aside to cool.


Cook the bacon: Heat oven to 400°F. Arrange bacon in a single layer on a parchment-lined rimmed baking sheet. Bake for 15–20 minutes, until crisp. Drain and cut into generous pieces. Toast the pecans: Toast at 350°F for 6–8 minutes, watching closely. Cool and roughly chop. Make the vinaigrette: Whisk together vinegar, Dijon, maple syrup, garlic, salt and pepper. Slowly whisk in olive oil until emulsified.
Assemble the salad: Arrange romaine on a large shallow platter. Slice the apples and avocado shortly before serving. Arrange chicken, sweet potatoes, apples, avocado, bacon, blue cheese, pecans and halved soy eggs in loose bands or clusters over the greens. Drizzle with vinaigrette and serve with additional dressing alongside.

For the Cobb Salad
- 3 large hearts, romaine, chopped

- 2 ripe avocados
- 4 ounces blue cheese, crumbled

For the Cider-Dijon Vinaigrette
- 1/3 cup extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon pure maple syrup
- 1 small garlic clove, very finely minced or grated
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon ground black pepper

🥗 Serving Suggestions
Serve It as a Composed Salad
For a dinner party or fall lunch, I love serving this Cobb on one big, shallow platter. Arrange the romaine first, then scatter the chicken, roasted sweet potatoes, crisp apples, avocado, bacon, blue cheese, pecans and halved soy eggs over the top. You don’t need perfectly straight rows — loose clusters make it feel abundant and inviting, and let all those colors and textures show.
Drizzle with a little of the cider-Dijon vinaigrette just before serving and pass the rest at the table so everyone can add more to their liking.
Make It a Harvest Cobb Bar
For a more casual gathering, turn the salad into a little DIY buffet. Set out a big bowl of chopped romaine, then arrange the chicken, sweet potatoes, apples, avocado, bacon, blue cheese, pecans and soy eggs in individual bowls or on a large board. Put the vinaigrette alongside and let everyone build their own Cobb.
I especially like this approach when I’m serving a group because everyone can make the salad their own — extra blue cheese, more avocado, a few more sweet potatoes, whatever makes it onto their plate. It also means the salad stays crisp instead of sitting dressed on the table.
A Cobb salad doesn’t have to be fussy to feel special. Sometimes the best part is putting everything in the middle of the table and letting everyone dig in.
