Step-by-Step Instructions for Miso Caramel Snack Mix
STEP ONE: Measure Ingredients and Toast Nuts and Coconut
Before you start the caramel, get everything ready. Line a large sheet pan with parchment and measure out all your mix-ins so they’re within arm’s reach. Once the caramel starts moving, there’s no time to search for anything.


Toast your coconut on parchment paper in a 300°F oven for about 5 minutes or until it starts to smell fragrant and turn lightly golden.
Warm your cashews and macadamias in a low oven — 250°F for 8 to 10 minutes. You’re not toasting them deeply, just warming them through so they absorb the caramel instead of fighting it.
STEP TWO: Make the Caramel


Combine the sugar, water, and corn syrup in a medium saucepan over medium heat. Stir just until the sugar dissolves, then leave it alone. No stirring from here — just let it cook until it reaches 320–325°F and turns a light amber. It will smell like it’s almost ready before it looks like it. If you don’t have a thermometer, watch for a warm golden color — like pale honey, not dark tea. That’s your window.
STEP THREE: Finish the Caramel

Instructions
1. Prep everything first

2. Make caramel

- Cook without stirring to 320–325°F / light amber-hard crack
3. Finish caramel
Off heat, immediately stir in: miso, butter, vanilla, salt. Mix until smooth (fast, 5–10 seconds)
4. Coat anchor nuts ONLY
Add: cashews + macadamias (all of them) and toss quickly and gently with a rubber spatula (10–15 seconds). Immediately sprinkle sesame seeds into the pot gently folding once or twice with a rubber spatula.
5. Spread immediately
- Dump onto parchment lined tray right away
- Spread into a thin, single layer (try to gently separate nuts)
- Let it sit until completely cool and dry.
6. Add remaining mix-ins
