Chewy Cardamom Snickerdoodles

These Scandinavian-inspired Cardamom Snickerdoodles put a Nordic twist on a classic and beloved cookie. Tender, buttery and lightly crisp at the edges, they’re infused with fragrant cardamom and rolled in cardamom sugar for a sweet, aromatic finish.



Ingredients

FOR THE COOKIES

  • 1/2 cup (113g) unsalted butter, softened
  • 2/3 cup (134g) granulated sugar
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1 1/2 cup + 4 TBSP (210g) all-purpose flour
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 1/2 teaspoon high-quality ground cardamom
  • 1/4 teaspoon ground cinnamon

FOR THE CARDAMOM SUGAR

  • 1/4 cup (50g) granulated sugar
  • 2 1/2 teaspoon ground cardamom 

OPTIONAL BUT HIGHLY RECOMMENDED FOR FINISHING

  • 1/4 teaspoon cardamom seeds, very coarsely crushed from whole cardamom pods

Instructions

  1. Preheat the oven to 375°F. Line two baking sheets with parchment paper. 
  2. Make cardamom sugar. In a small bowl, combine the sugar and ground cardamom.
  3. Cream the butter and sugar. In a large bowl, beat the softened butter and 2/3 cup sugar for about 2 minutes until light and creamy.
  4. Add the egg yolks and vanilla. Beat until well combined. 
  5. Combine dry ingredients. In a separate bowl, whisk together the flour, cream of tartar, baking soda, salt, cardamom and cinnamon.
  6. Make the dough. Add the dry ingredients to the butter mixture and mix until just combined. Do not overmix.
  7. Chill the dough. cover and refrigerate for about 20 minutes. The dough should be firm enough to roll but still easy to scoop. 
  8. Form the cookies. Scoop about 1 tablespoon of dough for each cookie and roll gently into balls.
  9. Coat generously. Roll each ball thoroughly into the cardamom sugar, making sure the entire surface is coated. 
  10. Bake. Place cookies about 2 inches apart on the prepared baking sheets. Bake for 10-11 minutes, until the edges are set and the center still look slightly soft. 
  11. Cool. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
