Description
This granola is a breeze to pull together with just a handful of ingredients typically on hand. It is wonderful in yogurt parfaits and makes a lovely hostess gift.

- 3 cups of old fashioned oats (not quick oats)
- 1/2 cup coconut oil
- 1/2 cup maple syrup
- 1/2 cup unsweetened shredded coconut
- 1 cup chopped pecans
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 1/2 tsp salt
Instructions
- Preheat your oven to 300°F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats and chopped pecans. Stir to combine everything evenly.
- In a small saucepan, whisk together the maple syrup, melted coconut oil, vanilla, salt and cinnamon until well combined.
- Pour the wet mixture over the dry ingredients and mix until everything is evenly coated.
- Spread the mixture onto the baking sheet in an even layer.
- Bake for 25-30 minutes until golden brown, stirring occasionally to ensure even baking.
Notes
Once cooled, you can optionally add some mix ins like raisins or dried blueberries or cherries.
