MAPLE PECAN GRANOLA

This granola is a breeze to pull together with just a handful of ingredients typically on hand. It is wonderful in yogurt parfaits and makes a lovely hostess gift. 



Ingredients

  • 3 cups of old fashioned oats (not quick oats)
  • 1/2 cup coconut oil
  • 1/2 cup maple syrup
  • 1/2 cup unsweetened shredded coconut 
  • 1 cup chopped pecans
  • 1/2 tsp vanilla 
  • 1/2 tsp cinnamon
  • 1/2  tsp salt 


Instructions

  1. Preheat your oven to 300°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats and chopped pecans. Stir to combine everything evenly.
  3. In a small saucepan, whisk together the maple syrup, melted coconut oil, vanilla, salt and cinnamon until well combined.
  4. Pour the wet mixture over the dry ingredients and mix until everything is evenly coated.
  5. Spread the mixture onto the baking sheet in an even layer.
  6. Bake for 25-30 minutes until golden brown, stirring occasionally to ensure even baking.

Notes

Once cooled, you can optionally add some mix ins like raisins or dried blueberries or cherries.
