Chocolate Chip Cookie Dough Protein Bites

Ingredients

  • 1 cup almond flour
  • ½ cup vanilla protein powder
  • ¼ cup unsalted creamy peanut butter or almond butter
  • 23 tbsp maple syrup (start with 2 and adjust to taste)
  • 23 tbsp non-dairy milk (more as needed to bind)
  • 1 tsp vanilla extract
  • 1/3 cup chocolate chips
  • Pinch of salt (about 1/8 tsp)
  • Optional: 1–2 tsp unsweetened cocoa powder or ¼ tsp cinnamon

Instructions

  1. In a medium bowl, mix almond flour, protein powder, salt, and optional cocoa/cinnamon.
  2. Add peanut butter or almond butter, maple syrup, vanilla, and 2 tbsp milk. Mix until it forms a dough.
  3. Add more milk if needed, 1 tsp at a time.
  4. Fold in chocolate chips.
  5. Scoop and roll  into tablespoon-sized balls.
  6. Refrigerate at least 30 min to firm up.
