Ingredients
- 1 cup almond flour
- ½ cup vanilla protein powder
- ¼ cup unsalted creamy peanut butter or almond butter
- 2–3 tbsp maple syrup (start with 2 and adjust to taste)
- 2–3 tbsp non-dairy milk (more as needed to bind)
- 1 tsp vanilla extract
- 1/3 cup chocolate chips
- Pinch of salt (about 1/8 tsp)
- Optional: 1–2 tsp unsweetened cocoa powder or ¼ tsp cinnamon
Instructions
- In a medium bowl, mix almond flour, protein powder, salt, and optional cocoa/cinnamon.
- Add peanut butter or almond butter, maple syrup, vanilla, and 2 tbsp milk. Mix until it forms a dough.
- Add more milk if needed, 1 tsp at a time.
- Fold in chocolate chips.
- Scoop and roll into tablespoon-sized balls.
- Refrigerate at least 30 min to firm up.
